Children who eat little put parents in a lot of trouble, who have to invent recipes for children and presentations so that they have a good diet. A good example are these tomatoes stuffed with egg and potato with béchamel sauce.

With ingredients like these we can make a combination of mild flavor that will be very attractive to the palate of children, but it is also a good way to encourage them to try tomatoes, full of vitamins.

  • 2 tomatoes
  • 4 eggs
  • 2 potatoes
  • 3 tablespoons of flour
  • 50 gr. butter or margarine
  • 1 l. milk
  • Oil
  • Nutmeg
  • Salt

1. Wash the tomatoes, cut them in half and empty them with a spoon. Reserve the tomatoes.

2. Bring water to a boil in a pot with a little salt. Wash, peel and chop the potatoes. When the water starts to boil, add the potatoes and eggs, leave them for about 10-15 minutes, until the egg is cooked and the potatoes are soft.

3. Prepare the bechamel: Melt the butter or margarine with a couple of tablespoons of oil in a pan, add the flour and form a dry paste.

4. Pour in a splash of milk and let it soak in. Repeat the operation adding the milk little by little until you have a light béchamel sauce, and add a little nutmeg and salt to taste.

5. Mash the potato with a fork and add it to the béchamel. Chop the cooked eggs and do the same, stir until well mixed and distribute the mixture over the tomatoes.

6. You can gratin the béchamel in the oven a little so that it is golden brown (optional).
